Young Buck
Made by Mike’s Fancy Cheese, in Newtownards, Northern Ireland, Young Buck is a raw milk blue cheese, made to a Stilton-style recipe that started from a book called Practical Cheesemaking that was published in 1917.
Made using milk from a herd of 150 Holstein Friesian cows, Young Buck is a big-flavoured one: spicy, with notes of salt and black pepper and a pleasing creamy paste complemented by the wilder textures on the rind.
Ingredients: unpasteurised cow’s milk, salt, animal rennet and starter cultures.
