Yoredale
A gorgeous raw milk Wensleydale made by Ben and Sam at Curlew Dairy in the Yorkshire Dales.
Unlike traditional crumbly Wensleydale, Curlew use a slower, historic recipe which leads to a smooth and VERY buttery texture. The flavour has all the lemon yoghurt acidity you would expect from a Wensleydale, with subtle minerality closer to the rind.
Made using unpasteurised milk from grass-fed cows to reflect the very best of the land, the weather and the seasons in which it’s made. It is clothbound with butter, and aged for 3-4 months.
Ingredients: unpasteurised cow’s milk, salt, vegetarian rennet, starter cultures.
