Single Gloucester
Made by Charles Martell, who has rightfully earned this humble but mighty cheese a PDO, this Single Gloucester is a brilliant farmhouse cheese, perfect for a Ploughman’s or melting.
A softer and more open texture than most English hard cheeses, it is uncoloured, unlike its counterpart Double Gloucester. This cheese also tends to have a lower fat content, hence ‘Single’ rather than ‘Double’ (as in single and double cream), traditionally being kept as a family cheese rather than exported to big, wealthier cities. A mellow and slightly lactic flavoured cheese, it is eaten young, and goes well with a glass of perry.
Made with pasteurised Old Gloucester cow’s milk with traditional rennet.
