Sparkling medium dry barrel-aged fine cider by Tom Oliver. This one is now celebrating its 10th iteration cider blended with Ryan Burk, now of Occam Cider in the Hudson Valley in New York. It celebrates the many wonderful possibilities of tannic cider fermented by wild yeasts in oak barrels.
A dark bright molasses amber colour. Rich bittersweet ripe pomme flavour, with subtle woody notes and vanilla giving a very drinkable, indulgent cider. A wonderful mouthful of plush, orange citrus, tannic cider.
