A wonderful goats blue made by Ben and Laura at Ticklemore Cheeses in Totnes Devon, to a Roquefort-style recipe. It’s much lighter and more delicate in its delivery, however, often with notes of flapjack or biscuit.
Ingredients: pasteurised goat’s milk, salt, vegetarian rennet, starter cultures.
