Extra Mature Cornish Gouda

A delicious, authentic Gouda made by the wonderful Giel near Looe in Cornwall. The Extra Mature Gouda is generally between 18 months to 2 years old. It has a rich, tangy, diverse flavour with subtle boozy notes, at times comparable to Comte. At this age the cheese has a firm texture and a pleasing crunch from the crystals that have developed. This cheese is made using the farms own unpasteurised milk and a vegetarian rennet.
